At Restaurante Arrocería Zoko Retiro we’re launching a brand-new menu. What does that mean? More risotto-style rice dishes, more Valencian paella-style rice classics, and traditional Spanish recipes and winter stews executed with precision — now with a more classic approach from Chef Javi Álvarez.
The new menu, launched on February 20, was exceptionally well received — especially by lovers of rice in Madrid, who were delighted to see that our “Rice” section had expanded to include five different varieties of this iconic dish, so highly valued in Spanish gastronomy.
As part of this update, we’ve added to our risotto-style rice dishes our beloved Iberian rice, one of the signature classics from our Zahara de los Atunes rice restaurants, made with blood pudding and tender Iberian pork cheeks.
But the real highlight is our selection of Valencian paella-style dishes: Garlic Chicken Rice , Black Rice with Cuttlefish "a la Cochambrosa", Señoret (a shell-free seafood rice), and our latest showstopper "Madrileño" rice, made with a carefully slow-cooked traditional Madrid-style tripew of pork trotters and snout, prepared fresh every morning.

Our new “Winter” section makes cold days much easier to get through. It’s timeless, unplanned cooking — inspired by the very best ingredients the Chef finds at the market that day. That’s how our Daily Stews and Seasonal Vegetables come to life.
The section also features Artichoke with Velouté Sauce, Chicken Cannelloni made with crêpe-style pasta, spinach, and ricotta cheese, some outstanding "Callos a la Madrileña" (Madrid-style tripe stew), and Crispy Pork Ear with Brava Sauce, one of our classics, now back after some time off the menu.
